Abstract
Sporulation and enterotoxin production by Clostridium per-fringens strain 25 and 27 that were isolated in Korea were compared with C. perfringens strain H3. It was found that strain 25 showed a higher sporulation rate and enterotoxin production than H3. Strain 25 also showed a shorter generation time than H3. We found that pork hock (Chokbal) and pork liver promoted the growth rate of C. perfringens. These results suggest that the risk of food poisoning by entero-toxigenic C. perfringens strain 25 that grows very fast and produces large amount of enterotoxin is high.
